The Artisan APR-750 Cabinet is a pastry cabinet for the artisan workshop: tray runners, even cooling and a solid or glass door depending on the version. It is designed for pastry shops, bakeries, confectioneries and restaurants with their own workshop.

What the Artisan APR-750 Cabinet offers

The APR-750 measures 680 × 860 × 2130 mm (width, depth and height), has an operating range of -2°C +8°C and a volume of 645 litres. It also features 20 pairs of runners, a cooling capacity of 502 W and R290 refrigerant, as well as climate class 5 40°C 40%.

The digital control regulates temperature with efficient energy management; the interior has tray runners and the ventilated unit keeps cooling even. Freezer models operate at negative temperatures.

Construction and materials

Four details stand out in its construction. First, it features a forced-draught evaporator with anti-corrosion epoxy coating. In addition, the forced-draught fans stop when the door is opened. It also includes automatic evaporation of defrost water. Finally, it has injected polyurethane with a density of 40 Kg/m³ and zero ODP and GWP impact. These solutions are built to last in a demanding working environment.

Typical applications

It is installed in workshops to hold trays of product between stages, in pastry shops as a storage cabinet and, in the glass version, as a display unit in the shop. Freezer versions store frozen doughs and products.

Installation and maintenance of the Artisan APR-750 Cabinet

It only requires a power socket and ventilation space. Maintenance consists of cleaning the stainless steel interior, the runners and the condenser. For optimum operation, install the unit away from ovens and windows in direct sunlight, respect the ventilation clearances and schedule a condenser cleaning every three or four months; this is the maintenance task that has the greatest impact on consumption.

How to choose the right cabinet

Before deciding, work out how many trays you need to store and define the operating temperature; the version and door type are then chosen accordingly.
