The sausage curingis a traditional technique that has been handed down from generation to generation.

The process of stoving, fermentation and drying, results in a unique and highly prized product for consumption.

This process requires a dedicated space with controlled temperature and humidityas well as a specialised equipment.

In our experience, different customers need different configurations to get the same excellent end product.

  • AISI-304 stainless steel exterior, except for the backrest and base
  • AISI-304 stainless steel interior, with curved edges and deep-drawn bottom.
  • Reversible opening doors, with automatic closing system and magnetic seal (stays open beyond 90° of opening).
  • Inlayed stainless steel tailgate
  • ASCV: Interior light LED reddish tones
  • KITS butcher bars (3 bars per kit), optional shelves.
  • Stainless steel tubular feet adjustable in height 135 - 200 mm
  • Control panel and engine ventilation grille, removable
  • Ventilated condensing unit
  • Heating elements for heating cycle, with automatic reset safety thermostat (50°C OFF, 35°C ON)
  • Fans independent operation cold - heat - humidity
  • Heating with air renewal and air purification system
  • Forced draught system evaporator, with anti-corrosion epoxy coating
  • Forced draught fan stop when opening the door
  • Automatic evaporation of defrost water
  • Injected polyurethane insulation, density 40 Kg/m³, zero ODP and GWP
  • 70 mm side insulation
  • Digital control with efficient energy management and HACCP via WIFI or BT connection (optional)
  • 6 pre-configured programmes, reprogrammable according to process requirements.
  • Each programme has up to 8 cycles adjustable in time, temperature and humidity (drying mode only).
  • ASC and ASCV: an enclosure for heating and drying
  • ASC-S: an enclosure for drying only
  • ASC-EStwo independent enclosures, one for cooking and the other for drying.
