The Artisan CEAPI-100-H Water Chiller chills dough-mixing water so that dough temperature can be controlled from the very start. It is used by artisan bread and pizza workshops where dough temperature is key to fermentation.
What the Artisan CEAPI-100-H Water Chiller offers
The CEAPI-100-H measures 1405 × 565 × 580 mm (length, depth and height), has an operating range of +1°C +3°C and a capacity of 100. It also offers a cooling capacity of 583 W, a tap flow rate of 79 l/h and a power consumption of 346 W. It runs on R-290 refrigerant.
A digital control sets the water temperature; the tank holds the cold water reserve and the tap allows dosing directly into the mixer.
The -H version is for horizontal installation.
Construction and materials
There are some manufacturing details worth knowing. First, it features a 3/4” diameter safety overflow. In addition, it has the CEAPI AISI-304 stainless steel exterior. It also includes an AISI-304 stainless steel internal coil. Finally, it has injected polyurethane insulation, density 40 Kg/m³, with zero ODP and GWP effects. All of this is designed for daily professional use and easy cleaning.
Typical applications
It brings the dough to the target temperature from the mixing stage, especially in hot workshops. In all these cases the unit serves a dual purpose: storing the product under controlled conditions and presenting it or keeping it accessible where it is used.
Options and configuration
It can also be configured with a wall bracket.
Installation and maintenance of the Artisan CEAPI-100-H Water Chiller
It requires a mains water connection and a power socket. The condenser should be cleaned and the tank checked periodically. Location affects performance: avoid nearby heat sources and allow air to circulate through the condenser. Preventive maintenance (cleaning the condenser, checking the seals and the defrost system) prevents breakdowns and keeps consumption at catalogue values.
How to choose the right water chiller
Before deciding, calculate how much water you use per batch of dough and how often; from there, the tank capacity is chosen. In addition, the tabs on this page provide the full technical specifications, options and downloadable documentation for the CEAPI-100-H.

Frequently asked questions about the Artisan CEAPI-100-H Water Chiller
At what temperature does it supply the water? At the temperature set on the controller, within the model's range; please refer to the technical data sheet.
How much cold water does it supply per hour? It depends on the model and the temperature difference; the flow rate is shown in the technical data sheet.
Artisan Line (Pastry and Bakery):
This is the range dedicated to the artisan workshop. The entire interior of these units is sized for standard pastry and bakery trays (60×40, 60×45, 60×80 and GN 2/1 trolleys). It includes a very wide range of equipment:
Refrigerated counters and traditional refrigeration and freezer cabinets.
Roll-in cabinets and pass-through cabinets.
Controlled fermentation cabinets, including monoblock evaporators, heating elements and ultrasonic humidifiers (with demineralised water supply) to manage dough proving.
Water chiller tanks with stainless steel coil for use in preparing the doughs themselves.
