With the APRF-750 Artisan Cabinet, proving is programmed: cold to retard, controlled temperature to prove and dough ready at the planned time. It is designed for bakeries and patisseries that want to organise production and avoid unnecessary early starts.

What the APRF-750 Artisan Cabinet offers

The APRF-750 measures 680 × 965 × 2130 mm (width, depth and height), has an operating range of -10°C 40% +30°C 99% and a volume of 565 litres. It also has 20 pairs of runners, a cooling capacity of 584 W and a heating capacity of 643 W. In addition, it uses R290 refrigerant and is rated climate class 5 40°C 40%.

A digital controller manages the temperature, humidity and timing of each stage. The interior takes trays and trolleys depending on the model, and humidification prevents the dough from forming a crust.

Construction and materials

These are its most relevant construction features. First, it incorporates an interior with stainless steel runners, height-adjustable in 60 mm steps. It also has stainless steel tubular legs, height-adjustable 135 - 200 mm. It further includes a lift-up control panel. Finally, it features a MONOBLOCK system with condensing unit and evaporator. These are details you notice day to day: fewer breakdowns, faster cleaning and better product preservation.

Typical applications

Typical uses include cold retarding of dough, controlled proving of bread and viennoiserie, and organising production in shifts.

Options and configuration

The available options also include a 600x400 grid, a 600x800 grid, a set of 4 castors, a water filter, 230V 60Hz / 115V 60Hz and a door-opening pedal.

Installation and maintenance of the APRF-750 Artisan Cabinet

Simple installation: level the unit, connect it and programme the first cycle. After that, periodic cleaning of the interior and the humidity system. As a general rule, leave a few centimetres of clearance around the condenser area, avoid direct exposure to sunlight or heat sources and do not obstruct the ventilation grilles. An annual check by the technical service extends the service life of the unit.

How to choose the right cabinet

The choice depends on the volume of dough per cycle, whether you work with trays or trolleys and the space available. In the tabs on this page you will also find the full technical specifications, the options and the downloadable documentation for the APRF-750.
