The APRF-950 Artisan Cabinet controls temperature and humidity so that bakery and pastry doughs prove when the workshop decides, not when ambient conditions dictate. It suits artisan bakeries, pastry workshops and restaurants that bake their own bread.

What the APRF-950 Artisan Cabinet offers

The APRF-950 measures 812 × 1125 × 2130 mm (width, depth and height), has an operating range of -10°C 40% +30°C 99% and a volume of 870 litres. It also has 20 pairs of runners, a cooling capacity of 942 W and a heating capacity of 645 W. In addition, it uses R290 refrigerant and is rated climate class 4 30°C 55%.

A digital controller manages the temperature, humidity and timing of each stage. The interior takes trays and trolleys depending on the model, and humidification prevents the dough from forming a crust.

Construction and materials

Four details stand out in its construction. First, it incorporates a MONOBLOCK system with condensing unit and evaporator. It also has an ultrasonic nebulising humidifier, which requires an external supply of demineralised water. It further includes forced-draught fans that stop when the door is opened. Finally, it features automatic evaporation of defrost water. These solutions are built to last in a demanding working environment.

Typical applications

It is installed in bakery workshops to programme overnight proving, in patisseries for viennoiserie doughs and in restaurants that make their own bread.

Options and configuration

The standard configuration can also be extended with a 600x400 grid, a 600x800 grid, a set of 4 castors, a water filter, 230V 60Hz / 115V 60Hz and a door-opening pedal.

Installation and maintenance of the APRF-950 Artisan Cabinet

It only requires a power socket, space for ventilation and, depending on the version, water for humidification. The interior and the condenser should be cleaned regularly. For optimal operation, install the unit away from ovens and windows with direct sunlight, observe the ventilation clearances and schedule condenser cleaning every three or four months; this is the maintenance task that has the greatest impact on consumption.

How to choose the right cabinet

Before deciding, work out the number of trays per cycle and the type of product; the capacity and configuration are chosen on that basis. In the tabs on this page you will also find the full technical specifications, the options and the downloadable documentation for the APRF-950.
