Refrigeration for baking kitchens has a requirement not found in a conventional kitchen: the equipment must accommodate the trays and carts already in use in the baking kitchen, without the need for transfer. CORECO Gourmet’s Artisan line is designed for 60×40, 60×45, and 60×80 trays and for GN 2/1 carts, and includes refrigerated tables, refrigeration and freezer cabinets, cart storage cabinets, proofers, and water chillers. This guide explains how to choose among them.
Selection Criteria for Refrigeration Systems in Baking Facilities
Tray Size
This is the first filter. The MRP and MCP tables are designed for 60×40; the APR-750 and APR-1002 cabinets are designed for 60×40 or 60×45, depending on the model; and the APR-950 and APC-950 are designed for 60×80. The interior rails are made of stainless steel and are height-adjustable in 60-mm increments in the cabinets.
Temperature: refrigeration, freezing, or fermentation
The refrigeration models (MRP, APR, and ARC) operate from -2 °C to +8 °C, and the freezer models (MCP and APC) operate from -20 °C to -15 °C. The ACC freezer cabinet for carts operates from -20 °C to -10 °C, and the AIC ice cream cabinet operates from -25 °C to -10 °C. The APRF proofing cabinet combines cooling and heating: from -10 °C with 40 % humidity to +30 °C with 99 %, so that the dough can be proofed and fermented in the same unit.
Dimensions and Type of Equipment
The tables are 850 mm high and 800 mm deep, with lengths of 1495, 2020, and 2545 mm depending on the model in the MRP, MRPV, MCP, and MCPV series, and 1195, 1,720, and 2,245 mm in the pre-installation series. The cabinets are 2,130 mm high: those that are 680 mm (750) and 1,370 mm (1,002) wide are 860 mm deep, and the 950 mm-wide cabinets are 812 mm wide and 1,015 mm deep. The ARC and ACC cart cabinets are 2,450 mm high and 1,045 mm deep.
Built-in condenser unit or pre-installation
The MRPP, MRPPV, MCPP, and MCPPV units are pre-installation models: they do not include the condenser unit or the refrigerant expansion control, which are installed separately. The MRP and MCP models feature a ventilated, removable condenser unit, which simplifies maintenance.
Conditions of the Premises
In bakery refrigeration, the environment is just as important as the equipment, because many bakeries operate with the oven nearby. The MRP and MCP tables are rated for a working ambient temperature of 40 °C, while the MRPV and MCPV models are rated for 32 °C. Several models offer a tropicalized option rated for 43 °C. Also check the climate class listed on each product sheet.
Controls and Options
The MRP and MCP tables and APR cabinets feature digital control with real-time monitoring and operation via a smartphone or tablet app. The APRF fermenter regulates temperature and humidity, with alarms for an open door and high condensation temperature. Options include additional guides and racks, wheel sets, a stainless steel back panel, a foot pedal for opening the door on the cabinets, and, for the tables, a countertop with a splash guard or a granite top.

When to Choose Each Piece of Equipment
- MRP Refrigerated Table: A workstation with a cooling unit underneath, so you can keep dough, creams, and fillings within easy reach.
- MCP Freezer Table: Frozen dough and semi-finished products next to the work area.
- APR-750 or APR-1002 Cabinet: refrigerated proofing cabinet in 60×40 or 60×45; the APR-950, if the bakery uses 60×80 trays.
- APR-950-PT: A walk-through cabinet with doors on both sides, for loading from one side and unloading from the other.
- APRF Fermenter: Controlled fermentation with ultrasonic humidification; requires an external supply of demineralized water.
- ARC (refrigeration) and ACC (freezing) cart cabinets: when the product is transported by cart and it is not practical to unload the trays.
- CEAP and CEAPI Water Coolers: Water for kneading between +1 °C and +3 °C, with automatic filling via a float valve and an internal agitator; the CEAP has a plastic-coated exterior, while the CEAPI has a stainless steel exterior.
Common Mistakes
- Choosing a cabinet based on liters without checking the tray size: a 60×80 tray won't fit in a 60×40 cabinet.
- Place a table next to the oven, set up for a room temperature of 32 °C.
- Purchase a pre-installation table without including the condensing unit and refrigeration system.
- Do not forget to provide the demineralized water from the fermenter, which the ultrasonic humidifier needs to operate.
- Use the same cabinet for both fermenting and finished products.
All models are listed on the product line page Artisan and in the Gourmet Equipment Catalog. Whether you're setting up a new kitchen or expanding an existing one, CORECO Gourmet's technical team can help you coordinate tables and cabinets through the contact form.
Frequently asked questions
What tray sizes are compatible with Artisan machines? The line is designed for 60×40, 60×45, and 60×80 trays and for GN 2/1 carts. Each data sheet specifies the specific model configuration.
What is the difference between an MRP table and an MRPP table? The MRP features a ventilated, removable condenser unit. The MRPP is a pre-installation version without a condenser unit or expansion control, which connects to a separate refrigeration system.
Does the APRF fermenter need a water inlet? Yes. Your ultrasonic mist humidifier requires an external supply of demineralized water, and a water filter is available as an option.
